Banana Chocolate Chip Muffins

Ingredients:

  • ¼ Cup of Vegetable Oil
  • 1 Egg
  • ¼ Cup of Sugar
  • 2 Mashed Ripe Bananas
  • ¼ tsp of Vanilla Extract
  • ½ Cup All Purpose Flour
  • ⅓ Cup Whole Wheat or White Whole Wheat Flour
  • ½ tsp Baking Powder
  • ¼ tsp of Baking Soda
  • Pinch of Salt
  • Pinch of Cinnamon
  • ½ Cup of Chocolate Chips

Directions:

  • Preheat oven to 400 degrees and line 8 cavities in a muffin tin with liners and set aside.
  • In a small bowl add the chocolate chips and whole wheat flour and mix until all the chocolate chips are coated in the flour. Set aside.
  • In a large bowl add the Bananas and mash well. Add the Vegetable Oil, Eggs, Sugar, and Vanilla Extract and mix until all combined.
  • In the same bowl, sift together on top of the wet ingredients the All purpose flour, baking soda, baking powder, salt and cinnamon. Whisk until all combined.
  • Fold in the chocolate chip and flour mixture with a spatula.
  • Using an ice cream scoop, put batter into your muffin tin and bake for 18 minutes.
Chunky Chicken Noodle Soup

Chunky Chicken Noodle Soup

Ingredients:

  • 3-pound chicken, cut up and skinned
  • 4 cups water
  • 3/4 teaspoon poultry seasoning
  • 1/4 teaspoon dried thyme
  • 3 celery tops
  • 2 cups water
  • 2 ounces uncooked medium egg noodles
  • 1/2 cup sliced celery
  • 1/2 cup sliced carrot
  • 1/3 cup sliced green onions
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons chicken-flavored bouillon granules
  • 1/4 teaspoon coarsely ground black pepper
  • 1 bay leaf
  • Additional coarsely ground black pepper (optional)

Directions:

  • Combine first 5 ingredients in a pan; bring to a boil. Cover, reduce heat, and simmer 45 minutes or until chicken is tender. Remove chicken from broth, discarding celery and keep the broth.
  • Skim fat from broth. Add 2 cups water and next 8 ingredients to broth; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  • Bone and chop chicken; add to broth mixture. Cook 5 minutes or until thoroughly heated. Discard bay leaf. Serve soup into bowls, and sprinkle with additional pepper, if desired.
